Because I had karaage for x'mas eve, and it's very extremely yummy. But I've never made karaage before so it's just a perfect timing that Aiba-chan has the karaage episode... for X'mas. Yey! In this episode, Aiba-chan is not super hyper but nevertheless his smiles are so wide and big, maybe since this episode is done close to his b'day and karaage being his fave food add up to his cheerfulness. Lots of giggles and laughter in this episode too and for the first time, he's not 100% doing all the dirty job! Sawabe & Watabe got to get down dirty too LOL!



Karaage!!! Seriously, it's yummy!!! I always thought it's troublesome to make... well.. after watching the episode, it is quite troublesome, but worth trying!

This is the Japanese thingy, Christmas is related to... Karaage, well actually it's the Fried Chicken (KFC manifesto). So, yeah, that's why it's a Karaage episode.

So what's the difference between Karaage and Fried Chicken?

The next one is quite different, they fried the whole half chicken using kare flavoring, from Niigata, Hanbaage.
Whoa... this one will be difficult to make... to fry those bulky item...


This one comes from Nagano. It's huge! It's called Sanzokuage.
It uses shoyu and garlic as seasoning.
Obviously the sensei like this one because the way he describes the flavor is so dramatic LOL...


Aiba-chan eat it just like that... OMG...

Standard Karaage is made from either thigh meat or breast meat.
Thigh meat for the softness and juiceness.
Breast meat for refreshing taste.
Honestly, I've never eaten karaage made from breast meat... breast meat is more expensive than the thigh meat, that's why. So, you gotta make it yourself if you wanna try it.


Recommendation?
Whole chicken. If I'm not wrong, the reason is because it has all the different texture... not sure...
Aiba: it has 2 wings, 1 for him, 1 for Watabe...

Price tag... that's a 1 expensive chicken!!! 1 chicken (weighing close to 2kg) for 1,535 Yen (around 18SGD)... The roast chicken in Cold Storage is only 7SGD for the whole thing... damn... and everybody is saying 'it's cheap'... just how much is expensive... it's just a chicken!!!
Funny moment, the shop owner placed back the chicken and made an obviously loud 'don' sound..

So you need to use young chicken, a 3 month old chicken.. for the juiciness...
Have you ever asked how old is the chicken when you buy chicken at the supermarket? Probably only at your special butcher you get to ask this kind of question hehe...

So, they're deciding what kind of karaage they want to make... obviously Aiba-chan loves the nuts karaage (looking at his expression when he said nuts LOL)



So they decided to make the Standard, Nuts and Curry flavor


Marinate base is:
Shoyu 550ml
Water 250ml
Sugar 30g
Salt 15g
Shochu 200ml
Me: what??? Shochu??? that's freaking expensive here, can we substitute it with cooking wine? Or cooking sake?
Aiba-chan is sniffing at Shochu to make sure that it's shochu hehe... so we use shochu to eliminate the smell, huh?


Sawabe & Watabe teased Aiba-chan whether he can pour the shoyu properly.
Aiba-chan: I'm already 31 years old --> birthday banner showed hehe
Pour everything into the pan and heat it up. I don't think it got into the boiling point, probably just enough to melt the sugar and salt, and take out the alcohol from Shochu.

While waiting, here comes the precious moment where I don't think you get to see in Arashi show.
Watabe: You're always working during Christmas, right? How do you feel when you're back at home? Before that you're saying 'Merry X'mas' on the show (I think he's referring to the music live shows... which is usually the M-station super live show) and being hyped up then you go home, what do you feel?... Watabe-san, are you sure he goes straight home? LOL...


Aiba: *coolly* nothing change, just like the normal days... *loose translation here*


Watabe: Then what you bring home the cake from the show...
Aiba: *quickly shake his head* That's a no. I eat it at the location (where the show is at). If I bring home, it'll be sad.

Aiba-chan wants to go to Disneyland during Christmas because he never been there during X'mas... *wait, I thought you performed at Disney Sea couple years ago? Maa, I guess it's a different feeling then*, it's a dream for him..

So after the sauce cools down, add on sesame oil (30ml) and add grated ginger and garlic (total about 4 teaspoon)

Cutting the chicken... it has technique too...


So, can we cut the bone sloppily? well... no...
I'm skipping the why we're cutting in certain way because... lazy people like me will just get the boneless chicken from supermarket XD.

But be sure to cut 1 cm little bit of the meat to prevent shrinkage


First, stir in the sesame oil and take a laddle into the bowl...
Then time to marinate... be careful...


Not to knead the meat like what Aiba-chan did...


If you knead the meat, it won't become juice because you're squeezing the water out.


So, what you need to do is twirl the meat from the bottom of the bowl for about 10 minutes. What I'm not sure is, why the sauce dries out... the chicken meat absorb it if you do the twirling for 10 minutes? Lazy people (me) will just marinate for 1 day.
To make a crunchy karaage, use potato starch. Sprinkle the starch bit by bit on your chicken and with the same twirling movement, mix it with the chicken.
Aiba-chan is super enthu doing this and I like how he sprinkle the flour, he must have learnt that somewhere from other variety show hehe...


Before you put the chicken on the fryer, pat the chicken to remove the excess starch and off they go to the fryer.
Oil temperature should be around 180C, if you're cooking a lot at one go, it should be about 200C.


How about the nuts karaage?
Same method but less starch and then...


roll it on the nuts and off to the fryer.
Watabe noticed that Aiba-chan is not affraid of oil

So they come out with 'Captain Aiba' (from Captain Tsubasa)

How about the Kare flavor karaage?
After before twirling the meat with the potato starch, twirl it with kare powder first.


Then potato starch then off to fryer.
If using the same oil, fry the kare karaage the last. It's because your oil will absorb the kare smell :).


Frying technique: Don't touch for the first 15 seconds

AIba: But Matsujun will go 4 times (maybe different shops, or pick different items). Probably because he loves doing this (loose translation, again and he looked so proud when he's explaining this... ah Arashi member ai <3 )
